Concert cocktail recipe: Rossini bellini

Picking up last-minute festive treats? Add this cocktail to your list to make your New Year’s cheers extra tasty. Here’s to 2021! Tune in to our special New Year’s Eve broadcast on Thursday, December 31 at 8 pm CST and again at 10 pm CST, which will feature Gioachino Rossini’s Overture to The Silken Ladder.

Thank you to our friends at the Saint Paul Hotel who served this sweet, bubbly bellini with a musical twist at our 2019 opening night festivities.

Cocktail ingredients:

  • 4-6 oz. Champagne or prosecco of your choice
  • 1 oz. Peach schnapps
  • 1 oz. Raspberry purée (homemade or store-bought) or 1 small scoop raspberry sorbet
  • (optional) Fresh raspberries, for garnish

Mocktail ingredients:

  • 4-6 oz. Sparkling juice or seltzer of your choice
  • 1 oz. Peach juice or nectar
  • 1 oz. Raspberry purée (homemade or store-bought) or 1 small scoop raspberry sorbet
  • (optional) Fresh raspberries, for garnish

Directions:

Combine ingredients in a glass of your choice, starting with the sorbet or purée. Stir gently and drop in 2-3 fresh raspberries for added pizazz. Enjoy!
